Grab & Go Chia Yogurt Parfait
A favorite grab-and-go breakfast flecked with lots of nutritional chia seeds, and topped with berries and whatever you like for crunch - granola, popped brown rice or quinoa, toasted nuts. Take two minutes to combine ingredients the night before, and you have the perfect portable breakfast with next to no effort. If you'd like a dairy-free / vegan version, have a look here.
1+ cup of plain yogurt
1+ tablespoon chia seeds
sweetener to taste (liquid stevia, maple syrup, honey, etc.)
1/2 teaspoon vanilla extract
a handful of seasonal fruit (i.e. smashed berries)
something crunchy (see headnotes)
Spoon the yogurt into a jar. Stir in the chia seeds, any sweetener you like, and vanilla extract. Top with the fruit, and whatever you like that is crunchy. Place in the refrigerator overnight, or at least 10-15 minutes (to let the chia bloom).
