Working with this beautiful Spanish cleaver has been a revelation for us. The deep blade makes opening a winter squash or slicing through a head of cabbage or cauliflower intuitive and nearly effortless— making it easy to get into a rhythm as you thump it across a pile of herbs or greens. Using this cleaver feels like a partnership—its weightiness means you’re aware of its presence in your hand, yet it’s not at all difficult or awkward to wield. We love our new ritual of chopping everything with it.
Like the Pallarès kitchen knife, folding knife, and kitchen shears, this is a forever piece made by a third-generation knife smith in the small town of Solsona, Spain, not far from Barcelona. Each blade is hand-fashioned from high-quality stainless steel, set with a boxwood handle, and stamped.
Care: Made of durable stainless steel, this cleaver can be hand-washed regularly without ill effect. Be sure to dry the wood handle completely after use, and when it’s time, have it professionally sharpened.
