Carbon Steel Knives

Carbon steel knives are wonderful. They hold an edge, and develop a beautiful patina over time - a natural part of using a carbon knife. We love the gradual deep grey staining of the blade which personalizes it and tells a visual story. Each meal leaves it's impression on the blade. Carbon steel knives aren't for everyone, they require more attention than stainless, but we find that for the right cooks they are a great fit. Each of these knives feature a carbon steel blade, or in the case of a couple - have a carbon core wrapped with another less-reactive steel.
