Rose Petal Granola
Preheat oven to 300F. Set out two rimmed baking sheets. In a large mixing bowl combine 4 cups rolled oats, 1 1/2 cups walnuts, 1/2t. salt, 1/8t. fresh pepper, 2/3 cup dried currants, and the petals of six small dried roses.
Heat 1/2 cup butter gently, and whisk in 1/2 cup honey. Remove from heat and stir in 1/2t. rosewater. Pour honey mixture over oats and stir for at least 30 seconds. Stir in an egg white. Divide between baking sheets in a thin layer. Bake, stirring once or twice, for 35-40 minutes, or until golden. Let cool. Then sprinkle with petals from six more dried roses.
Makes 7 cups.
