Cucumber Gin Slush
A blended, gin-spiked cucumber slushy for the hottest of days. They're refreshing, easy-drinking, with a kiss of limoncello.
1/2 cup gin
1/4 cup limoncello
2 cups lemonade (or ginger beer is also great)
Lots of ice cubes
1-2 sm/med. Persian cucumbers, peeled, and seeded, plus more for serving
Combine the gin, limoncello, lemonade, ice cubes, and cucumbers in a blender. Blend well and serve each glass with a thin round of cucumber. If you like a salted rim, dip the rim of each glass in a bit of water, and then in a plate of salt.
Makes a good-sized pitcher.
