Turmeric Hummus

We love the vibrant color of split yellow mung beans here (also called split yellow dal) in place of traditional chickpeas. They are available at most Asian and/or Indian markets.

3 cups cooked split yellow mung beans

3 tablespoons tahini
3 garlic cloves, peeled
1/2 teaspoon dried turmeric
scant 1/2 teaspoon salt, or to taste
juice of one lemon, or to taste
3/4 cup ice water

to serve: basil flowers (optional), split yellow mung beans, turmeric, good extra virgin olive oil

Use a blender to puree the mung beans. Add the tahini, garlic, turmeric, salt, and lemon juice - puree again. Drizzle the ice water into blender and continue until very smooth, a couple of minutes. Taste and adjust with more salt and/or lemon juice. Serve drizzle generously with your favorite extra virgin olive oil, sprinkle with a few mung beans, bit or turmeric, and basil flowers.
