Coltellerie Berti Tortoise Cheese Knives

A trio of knives, each featuring a steel blade suited to a particular type of cheese. The knives are finished with tortoiseshell Lucite handles, and presented in a fabric wrap that rolls and secures with a leather tie for transport. The set gives any picnic the air of a considered occasion, and fits easily into a backpack along with a few wedges of cheese for a walk.

The knife with rounded tip is for spreadable cheeses such as ricotta, and and also suits honey, preserves, or other accompaniments well.

The rectangular blade is intended for slicing and shaving harder cheeses.

To gather a dollop of oozy brie, use the thin knife with divided end.

Berti has been making heirloom-quality knives in the Tuscan countryside since 1895. Still today, each knife is the complete work of a sole craftsman: Each and every knife is appreciated for the uniqueness of its character, given harmony of form down to minute detail, and bears the initials of its maker.

Care: Wipe each knife’s blade with a clean cloth or wash and dry it gently by hand before returning it to its fabric roll. It’s best to avoid harsh detergents or scrubbers. Since the steel has high carbon content, its resistance to corrosion and oxidation is not absolute.
