
Daphnis and Chloe Sweetest Mint

Spearmint is, traditionally, the only mint that Greeks use for cooking, and this beautiful variety is exceptionally sweet and fragrant. Steep it as a tea, toss with squash before roasting, and stir into yogurt to make a cooling sauce. The mint’s freshness can transform a dish, especially when combined with lemon, and is a beneficial digestive.
To use: Crush in a mortar and pestle or with your fingertips just before using. Mix with olive oil and lemon to make a marinade, and warm in ghee or butter to drizzle over yogurt, fresh-cut egg tagliatelle, or roasted eggplant.
