K Sabatier Antique Nogent Chef's Knife

Another treasure through our partnership with French knife maker K Sabatier: These beautiful 10-inch nogent chef's knives were forged in the 1960s and have been safely stored away since. They offer a rare opportunity to work with “new old stock” vintage pieces in their original condition. Their name “Nogent” refers to the ferrule, the ring that connects blade to handle, making the knives both very strong and easy to wield with control. Along with their light weight and narrow, gently sloped blades, the ferrule makes a great choice for everyday use in the kitchen.

Each blade is hand forged pure carbon steel, making it quick to sharpen and able to hold a crisp edge. European black wood handles are ashy, chocolate brown with a matte finish. 
No two of these knives are identical—the natural wood of the handles varies a bit, and there are occasional slight and charming imperfections of the sort one expects in vintage handmade knives. 

The blade will begin to develop a patina quickly—this is a natural part of using a carbon knife, and we love that the gradual staining of the blade personalizes it. If you prefer to use a stainless knife, though, we have a limited number of 8-inch antique chef's knives crafted with a stainless steel blade. Care: Prevent rust from forming by keeping the blade dry. Wipe it with a clean cloth after each use, and store it in a block or a spot where it won’t come into contact with other knives. To maintain the blade’s edge, you can employ your favorite method of sharpening; we prefer to use Japanese water stones. Oil the handle on occasion as necessary.
