Daphnis and Chloe Mediterranean Chili Flakes
The Greek word boukovo describes this smoked, sweet, and spicy seasoning made purely from Balcanic peppers. Traditionally crafted Boukovo pepper flakes are produced by just a few farmers, who cultivate the indigenous breed of pepper in the northern region of Aridaia. Daphnis and Chloe's supplier smokes the peppers using beech wood; the chilis are then gently ground to a toothsome consistency.
These are unlike any chili flakes you've tried. Their flavor is smoky, rich, and deep, with just a bassnote trace of hot spice. They are brilliant sprinkled over flatbreads and fresh cheeses, braised with dark greens, sprinkled in stews, or over eggs. Steep them in warmed olive oil to craft a smoky finishing drizzle for a lentil or mushroom soup.
