Daphnis and Chloe Thyme
From the plant that floods Grecian air with its hypnotic fragrance. These intact, pink-tipped buds are collected one by one along the Ionian coast by a family of experienced foragers.
To use: Crush the thyme buds in a mortar and pestle or with your fingertips just before using. Sprinkle in (or on!) pizza dough, quick breads, olive oil based vinaigrettes, and just about any potato preparation.
