Windmuehlenmesser Kitchen Knife

If you poke around a bit, you'll start to see this little carbon knife on proud knife strips the world over. A utilitarian charmer, this knife is much loved for the traditional way it is made, and the way it breaks in over time - not unlike a favorite wallet, or pair of shoes. It holds a keen edge, is incredible durable, and can be used for peeling, paring, and chopping.

Each Windmuehlenmesser kitchen knife is drop-forged (not stamped) from high-quality carbon steel in a process maintained since the 1800s, then set with a cherry wood handle. We've arranged to have each knife protected by a beautiful, structured, organic linen sheath, making it convenient to pack for picnics and road trips. It's ready anytime apples, cheeses and other snacks need to be cut up on the go. They're great to own individually, or as a set of six for the table.

Windmuehlenmesser has been making knives by hand in Solingen, Germany since 1872. The carbon blade will quickly develop a beautiful patina, while the cherry wood handle ages over time into one of those comfortable objects you regularly reach for in the kitchen. Slight variations in the wood mean that no two handles are exactly the same.

Carbon steel is harder than stainless steel and will hold its edge longer before needing to be sharpened. That said, it requires a bit of care and attention. Always remember to keep your knife dry, as carbon steel will rust when it remains wet. It is also natural for carbon steel to develop a lovely patina over time. Run a towel over the knife between uses and be sure to store in a dry place. We use a Japanese water stone to keep our blade sharp.
